Alfresco Eating

There’s nothing nicer than eating alfresco when the weather allows us to and eating British asparagus outside means that summer has definitely arrived! All of the following recipes can be enjoyed in the sunshine but they’re equally delicious inside if conditions aren’t balmy! In these asparagus recipes I have used rapeseed oil rather than olive oil but you can use either. I do recommend that you try rapeseed oil though, it has a light, nutty flavour which really brings out the best in the asparagus and it is as versatile as the vegetable itself. I have used it to barbeque with, to make salad dressings and for cooking, with great results. As an added bonus, rapeseed oil is rich in Omega 3 and 6 – the ‘good’ fats that help to protect the heart and lower cholesterol. Happy cooking! RACHEL GREEN
